I usually see a new product and immediately begin to think about its different uses. I love Trader Joe's (TJ's) and their unique selection of products and as well as the staples usually amount to a quick, tasty meal for our family. My latest craze is Plain Goat Milk Yogurt. It is pretty bland so I can't eat it alone, but I've been experimenting with it. Smoothies were the first obvious use for me and it tastes fantastic. However, I wanted to cook with it so tonight it's Cellentani pasta with ham, peas, carrots and Parmesan cheese with a goat milk yogurt and butter sauce.
Prep/Cooking Time: 20 minutes
Ingredients:
1/2 cup goat milk yogurt (TJ's)
4 tbsp butter (TJ's)
1 lb cellentani pasta (TJ's)
1/2 bag of frozen pea/carrot mix (Wegmans)
1 package of sliced ham
1 cup of Parmesan Cheese
1/2 tsp salt
1/2 tsp pepper
1/4 tsp oregano
1/4 tsp basil
1/4 tsp parsley
Preparation:
(1) Cook the pasta according to the directions on the box and save 1/4 cup of the pasta water
(2) Melt the butter and then add in the carrots, peas, ham, goat milk yogurt and pasta water until it comes to a simmer
(3) Add in the salt, pepper, oregano, basil, parsley and half of the Parmesan cheese
(4) Pour the remaining Parmesan cheese onto the drained pasta and then into the pot and mix everything together
